This winter has felt so long, and this morning I woke up aching for warm sunshine. With a rain storm on the horizon, I had to have a taste of fresh springtime in my very own kitchen. I present to you my new favorite easy sweet treat
Vegan Coconut Mango Pudding
- 1 cup Coconut Milk
- 1 cup Almond Milk
- 2 tbsp. Shredded Coconut
- 1 fresh diced Mango
- 3 tbsp. Chia Seeds
- 8 drops Liquid Stevia
- Mix all ingredients in a sealable container
- refrigerate overnight
- divide into bowls after setting and enjoy!
Why chia seeds you ask? They’re an amazing neutral ingredient that doesn’t have a distinct taste. They expand and create a great texture to almost any dish. They are packed with Omega Fatty Acids, fiber, protein, calcium, antioxidants…..need I say more? They’re AWESOME!
